The decision to prioritize Norwegian produce stems from its renowned quality, often referred to as the ‘Wagyu of the ocean.’ Leveraging Norway’s position as a major global seafood exporter, the team has had access to reliable logistics and contacts to ensure seamless shipments. “It hasn’t been a big problem for us, so it’s been really nice to work with our local, fresh seafood,” Espeland added, highlighting their commitment to starting with the best ingredients for the players.

The team’s culinary operations are managed by a trio of chefs: Aron Espeland, Eirik Tufte, and Christian Karlsson. While Espeland and Tufte are new to working with a football team, their culinary backgrounds are impressive. Espeland is a decorated chef, having won gold at the 2022 Global Young Chefs Challenge, and Tufte has experience in Norway’s top Michelin-starred restaurants.

Christian Karlsson, however, brings a wealth of experience with the national team, having been part of the staff since 1998. His long tenure means he understands the evolving dietary consciousness of modern footballers. “It used to be, ‘Give me a burger or pizza and I’m happy’,” Karlsson recalled. “Now they all know they’re using their body for work and need to take care of themselves.”

The players’ engagement with their diet is a notable shift. Players like Fredrik Aursnes show a keen interest in nutrition, often seeking confirmation on their dietary choices. Patrick Berg, for instance, adheres to a strict diet, avoiding gluten and lactose to optimize his body’s function.

Erling Haaland, the team’s star striker, is famously passionate about his food, known for his high-calorie intake and diverse meat preferences. While the team cannot provide raw milk due to US regulations, they cater to players who prefer lactose-free options. “He does love his food — he needs the energy to be running around with people on his back,” Karlsson said of Haaland’s appetite. The chefs also noted that Haaland and other players appreciate “honest, easy food techniques” and have even requested recipes.

Espeland, hailing from the same hometown as Haaland, Bryne, shares a personal connection with the striker, having known him since their youth. This familiarity adds a unique dynamic to their professional relationship.

Strategic Meal Planning

The chefs work closely with the team’s medical and performance staff to ensure every meal is nutritionally balanced. Meals are designed to provide high-quality protein for muscle repair, carbohydrates for energy replenishment, and essential micronutrients like omega-3 fatty acids, vitamin D, calcium, iron, and magnesium. Vitamins, minerals, and antioxidants are supplied through ample servings of fruits and vegetables.

“The goal isn’t to chase individual nutrients, but to create complete meals that help players perform and recover well,” Espeland explained. Meal timing is also critical, with pre-match meals differing from post-match recovery meals. Hydration is another key priority, especially given the tournament’s warm conditions, with the medical staff monitoring players’ hydration levels through urine tests.
